La Colombe Not Just a Meal—More a Memory to Last a Lifetime

Some call him artisan. Others say he is a showman.  There are even a few, who claim he is genius.  But however, you choose to describe him, and all the words above fit, he is, first and foremost, a chef.   That said, James Gaag is not simply a chef.  He is, in fact, one of the most talented culinary entertainers in the world. And certainly the very best in South Africa.  He presides over a Cape Town fine-dining establishment so famous that it almost needs almost no introduction. 

La Colombe restaurant is situated at the top of a steep, winding approach road. Located on the Silvermist Estate, it has expansive views over the Constantia Valley towards the sea in the distance.  It consistently wins local and international awards for its food. And has been on our bucket list ever since we learned we were coming to Cape Town.

Ker & Downey Africa

But no amount of pre-planning or excitement could have properly prepared us for the experience we enjoyed thanks to our hosts Ker & Downey Africa. Sarah Morris heads up the private client division of the Pan-Africa tour operator. She had invited us to dinner there, at the end of what was a most wonderful demonstration of how well she looks after her private clients.  The adventures she and her team create, perfectly showcase the very best of Africa! As we have found out during our whirlwind tour of the area.

Sitting down at our table, we are surrounded by floor to ceiling glass windows.  They allow an unrestricted view of the hillside. From the moment we sat down we knew we were in for a treat.  La Colombe means ‘the dove’ and it is that bird that inspires the restaurant design. Hand-drawn artwork by Lucie de Moyencourt and carved wooden doves by local artisan Lameck Tayengwa are everywhere.  Wood-burning stoves, exposed whitewashed timber beams, raw timber floors and dove grey and white tones complete the intimate feel.

Chefs Tasting Menu

And so, the show begins as we open our menus describing a 10 course, Chefs Tasting Menu. James Gaag playfully offers diners a curated journey through a series of meticulously crafted dishes. His tasting menus are an exploration of flavours, textures, and creativity.  They change seasonally showcasing the freshest f ingredients, often sourced locally or from Silvermist Farm itself.

The experience begins with a theatrical amuse-bouche, centred on the Doves Nest in the centre of the table and arrives in ceramic Dove Egg serving dishes. Playfully bowls of stones cascade onto our table releasing a covering of citrus-infused smoke as water is poured onto dry ice concealed beneath them and little by little course by course the culinary surprises follow.  Each one is an interplay of bold flavours, stunning presentations, and innovative techniques.

The pacing of the meal is impeccable courses arrive promptly but never rushed, allowing you to savour each dish and its intricate flavours. It’s evident that the service team is as passionate about the dining experience as the chefs are about creating it.

Service has been elevated into an art form. From the moment were welcomed, staff demonstrated the perfect balance between professionalism and warmth. Attentive without being intrusive, they anticipated our every need, guiding us through the menu with genuine enthusiasm. Each member of the team exhibits a deep knowledge of the food and wine offerings, enhancing the overall experience with their insights.

Promptly but never rushed

The pacing of the meal is impeccable courses arrive promptly but never rushed, allowing you to savour each dish and its intricate flavours. It’s evident that the service team is as passionate about the dining experience as the chefs are about creating it.

One standout moment was when our server presented a James Gaag signature dish that has remained a constant on his menus.  Tuna La Colombe, at first appears to be a tin can of supermarket tuna.  This pleasantly whimsical touch. It unfolds as you pull the tab to find the tin filled with cubes of marinated, raw tuna. It’s scattered with herbs so fresh that you immediately realise that the kitchen staff have cleverly sealed the can up just moments before it was served. 

Another memorable dish was the Namibian crab, game fish and nahm jim.  It was a combination of crab, raw fish with avocado cream and a spicy chili sauce. And was served on a delicate deep-fried cracker for a pleasant crunch.  The pairing with a lightly pickled vegetable garnish added an extra layer of complexity.

For dessert, La Colombe’s signature garden-themed creation stole the show. A medley of textures and flavours.  Think edible soil, delicate florals, and a tangy sorbet completely transformed into a visual masterpiece. It was as much a feast for the eyes as for the palate.

Wine pairings

Given its location on a wine farm, La Colombe takes wine seriously. The sommelier curates a pairing menu that seamlessly complements each dish. During our visit, the wine selection featured a mix of local gems and international stars, each chosen to elevate the dining experience.

Highlights included a crisp Sauvignon Blanc from Silvermist’s vineyards. this was paired with the fish course, and a robust Pinotage that beautifully enhanced the flavours of the duck. For those who prefer to explore on their own, La Colombe’s extensive wine list offers an impressive range of options.

Innovation and presentation

La Colombe excels in pushing culinary boundaries. The attention to detail extends beyond the plate. From custom-made crockery to the artful arrangement of microgreens, every aspect of the presentation is carefully considered. These touches showcase the chefs’ dedication to their craft and their desire to provide diners with a multi-sensory experience.

Fine dining at La Colombe undoubtedly involves a splurge attack on the credit card, but it’s one that feels justified given the quality of the experience.

The tasting menus, while on the higher end of the price spectrum, offer excellent value when you consider the sheer creativity, skill, and effort that go into each course. For special occasions or Ker & Downy Africa guests seeking a truly memorable meal, La Colombe delivers in every way.

We were amazed at how quickly the evening passed and twice rebooked our transport back into town because we were enjoying ourselves so much.  The food and the companionship of our Ker & Downey Africa hosts ensured that we had lost all concept of time.
